Sautéed Mushroom and Broccoli Stir-Fry

Ingredients

  • 2 cups broccoli florets
  • 1 1/2 cups mushrooms, sliced (such as cremini, button, or shiitake)
  • 2 tablespoons vegetable oil or sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced or grated
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional, for extra depth)
  • 1 tablespoon rice vinegar or lemon juice
  • 1 teaspoon sugar or honey
  • 1 teaspoon cornstarch mixed with 2 tablespoons water (slurry, for thickening)
  • Optional toppings: sesame seeds, sliced green onions, or crushed red pepper flakes

Preparation

Step 1: Prep the Vegetables

  • Wash and cut the broccoli into bite-sized florets.
  • Clean and slice the mushrooms.

Step 2: Prepare the Sauce

  • In a small bowl, mix soy sauce, oyster sauce (if using), rice vinegar, sugar, and the cornstarch slurry. Set aside.

Step 3: Sauté the Vegetables

  • Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.
  • Add the broccoli and stir-fry for 2–3 minutes until bright green and slightly tender. Remove from the pan and set aside.
  • Add the remaining tablespoon of oil to the pan, then sauté the mushrooms for 4–5 minutes until they release their moisture and begin to brown.

Step 4: Combine and Flavor

  • Return the broccoli to the pan with the mushrooms.
  • Add the minced garlic and ginger, stirring for about 1 minute until fragrant.
  • Pour in the prepared sauce and toss to coat the vegetables evenly.

Step 5: Thicken and Serve

  • Cook for 1–2 minutes, stirring frequently, until the sauce thickens and clings to the vegetables.
  • Remove from heat and garnish with sesame seeds, green onions, or crushed red pepper flakes if desired.

Tips for Success

  • Crisp-Tender Broccoli: Avoid overcooking to maintain a vibrant color and slight crunch.
  • Even Sautéing: Cut mushrooms and broccoli into similar sizes for even cooking.
  • Customize the Veggies: Add bell peppers, snap peas, or carrots for more variety.

Variations

  • Add Protein: Include tofu, chicken, or shrimp for a heartier dish.
  • Gluten-Free: Use tamari or coconut aminos instead of soy sauce.
  • Spicy Kick: Add a dash of sriracha or chili paste to the sauce.
