Ingredients

  • 1 lb dried beans (great northern, navy, or a 15-bean mix)
  • 1 smoked ham hock
  • 1 large onion, diced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 8 cups chicken or vegetable broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and black pepper, to taste

Preparation

Step 1: Soak the Beans

  • Rinse the dried beans under cold water and remove any debris.
  • Soak the beans overnight in a large bowl with enough water to cover them by 2 inches.
  • Drain and rinse before using. (For a quicker method, boil the beans for 2 minutes, then let them soak for 1 hour before draining.)

Step 2: Prepare the Soup Base

  • In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat.
  • Sauté the onion, carrots, celery, and garlic until softened, about 5 minutes.

Step 3: Add Ham Hock and Seasonings
