Step 4: Simmer the Soup
- Bring the soup to a boil, then reduce the heat to low.

- Adjust seasoning with additional salt and pepper, if needed.
Step 6: Serve
- Ladle the soup into bowls and garnish with shredded cheese or fresh parsley, if desired.
- Serve with crusty bread or crackers.
Tips for Success
- Use Fresh Peppers: Choose vibrant bell peppers for the best flavor and texture.
- Rice Options: Substitute cauliflower rice for a low-carb option or cook the rice directly in the soup for convenience (add more broth if needed).
- Make Ahead: Prepare the soup in advance and reheat when ready to serve.
Variations
- Cheesy Twist: Stir in 1 cup of shredded cheddar or mozzarella cheese before serving.
- Spicy Version: Add a diced jalapeño or a pinch of chili flakes for extra heat.
- Vegetarian Option: Omit the meat and use vegetable broth, adding black beans or lentils for protein.
