Stuffed Pepper Soup

Ingredients

  • 1 lb ground beef (or ground turkey)
  • 1 small onion, diced
  • 3 bell peppers (any color), diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 4 cups beef or chicken broth
  • 1 cup cooked rice (white or brown)
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika (optional)
  • Salt and black pepper, to taste
  • Optional garnish: shredded cheese or fresh parsley

Preparation

Step 1: Brown the Meat

  • In a large pot or Dutch oven, cook the ground beef over medium heat until browned and fully cooked.
  • Drain any excess fat.

Step 2: Sauté the Vegetables

  • Add the onion, bell peppers, and garlic to the pot with the beef.
  • Sauté for 5 minutes, or until the vegetables are softened.

Step 3: Add the Tomatoes and Broth

  • Stir in the diced tomatoes, tomato sauce, and broth.
  • Add the basil, oregano, smoked paprika (if using), salt, and black pepper.

Step 4: Simmer the Soup

  • Bring the soup to a boil, then reduce the heat to low.
  • Cover and simmer for 20–25 minutes, allowing the flavors to meld.

Step 5: Add the Rice

  • Stir in the cooked rice and let it heat through for 5 minutes.
  • Adjust seasoning with additional salt and pepper, if needed.

Step 6: Serve

  • Ladle the soup into bowls and garnish with shredded cheese or fresh parsley, if desired.
  • Serve with crusty bread or crackers.

Tips for Success

  • Use Fresh Peppers: Choose vibrant bell peppers for the best flavor and texture.
  • Rice Options: Substitute cauliflower rice for a low-carb option or cook the rice directly in the soup for convenience (add more broth if needed).
  • Make Ahead: Prepare the soup in advance and reheat when ready to serve.

Variations

  • Cheesy Twist: Stir in 1 cup of shredded cheddar or mozzarella cheese before serving.
  • Spicy Version: Add a diced jalapeño or a pinch of chili flakes for extra heat.
  • Vegetarian Option: Omit the meat and use vegetable broth, adding black beans or lentils for protein.
