Ingredients
- 4 boneless, skinless chicken breasts (or thighs)
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 cup pineapple chunks (fresh or canned, drained)
- 1 small red onion, sliced
- 1 zucchini, sliced into rounds
- 3 tablespoons olive oil
- 1/4 cup soy sauce
- 3 tablespoons honey
- 2 tablespoons ketchup
- 2 teaspoons minced garlic
- 1 teaspoon grated ginger
- 1/2 teaspoon smoked paprika
- Salt and black pepper, to taste
- Optional garnish: chopped green onions or sesame seeds
Preparation
Step 1: Preheat the Oven
- Preheat your oven to 400°F (200°C).
- Line a large sheet pan with parchment paper or foil for easy cleanup.
Step 2: Prepare the Marinade
- In a small bowl, whisk together the soy sauce, honey, ketchup, garlic, ginger, and smoked paprika.
Step 3: Marinate the Chicken
- Place the chicken breasts in a large zip-top bag or bowl.
- Pour half of the marinade over the chicken, reserving the other half.
- Marinate in the refrigerator for 15–30 minutes (optional for deeper flavor).

- Remove the chicken from the marinade and place it on top of the vegetables. Discard used marinade.
Step 5: Bake the Sheet Pan Meal
- Bake for 20–25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
- Brush the reserved marinade over the chicken halfway through baking.
Step 6: Serve
- Remove from the oven and let rest for 5 minutes.
- Garnish with green onions or sesame seeds, if desired.
- Serve with steamed rice, cauliflower rice, or on its own for a complete meal.
