Parmesan Meatloaf

Ingredients

  • 2 lbs ground beef (or a mix of beef and pork)
  • 1 cup breadcrumbs (plain or Italian seasoned)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup milk
  • 2 large eggs
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 1/4 cup chopped fresh parsley (or 2 teaspoons dried)
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup ketchup (for the meatloaf mixture)
  • 1/4 cup ketchup (for topping)
  • 1/4 cup grated Parmesan cheese (for topping)

Preparation

Step 1: Preheat the Oven

  • Preheat your oven to 375°F (190°C).
  • Line a baking sheet or loaf pan with parchment paper for easy cleanup.

Step 2: Prepare the Meatloaf Mixture

  • In a large bowl, combine the ground meat, breadcrumbs, Parmesan cheese, milk, eggs, onion, garlic, parsley, Italian seasoning, salt, pepper, and 1/4 cup ketchup.
  • Mix until just combined; avoid overmixing to keep the meatloaf tender.

Step 3: Shape the Meatloaf

  • Transfer the mixture to the prepared baking sheet or loaf pan.
  • Shape it into a loaf, pressing gently to form an even shape.

Step 4: Add the Topping

  • Spread 1/4 cup ketchup evenly over the top of the meatloaf.
  • Sprinkle with the additional 1/4 cup Parmesan cheese for a flavorful crust.

Step 5: Bake the Meatloaf

  • Bake in the preheated oven for 50–60 minutes, or until the internal temperature reaches 160°F (71°C).
  • Let the meatloaf rest for 5–10 minutes before slicing to allow the juices to redistribute.

Step 6: Serve

  • Slice the meatloaf and serve with mashed potatoes, roasted vegetables, or a side salad.

Tips for Success

  • Moist Meatloaf: Don’t skip the milk and eggs—they help keep the meatloaf tender and moist.
  • Flavor Boost: Use freshly grated Parmesan for the best flavor.
  • Make-Ahead: Prepare the meatloaf mixture in advance, cover, and refrigerate for up to 24 hours before baking.

Variations

  • Cheesy Center: Add a layer of mozzarella or provolone cheese in the center of the meatloaf for a gooey surprise.
  • Spicy Kick: Mix in 1/4 teaspoon of red pepper flakes for a bit of heat.
  • Low-Carb Option: Substitute almond flour or crushed pork rinds for the breadcrumbs.
