Ingredients

  • 4 bone-in or boneless pork chops (about 1 inch thick)
  • 4 slices bacon
  • 1 tablespoon olive oil
  • 1 small onion, sliced
  • 2 cups cremini or button mushrooms, sliced
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon dried thyme (or 2 teaspoons fresh thyme)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Preparation

Step 1: Cook the Bacon

  • In a large skillet, cook the bacon over medium heat until crispy, about 5-7 minutes.
  • Remove the bacon from the skillet and set aside, leaving about 1 tablespoon of bacon grease in the pan.

  • Return the pork chops to the skillet, spooning the mushroom sauce over them.
  • Cover the skillet and simmer for an additional 3-4 minutes, allowing the pork chops to absorb the flavors and heat through.
  • Stir in the crumbled bacon, and cook for another minute.

Step 6: Serve

  • Garnish the pork chops with freshly chopped parsley, if desired.
  • Serve hot with mashed potatoes, rice, or your favorite side dishes.
