Walnut Flip Cake
Ingredients
For the Cake:
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk (or regular milk)
- 1 cup chopped walnuts
For the Flip Topping:
- 1/2 cup brown sugar, packed
- 1/4 cup unsalted butter
- 1/4 cup heavy cream
- 1/2 teaspoon vanilla extract
- Pinch of salt
Preparation
Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
Step 2: Mix Dry Ingredients
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
Step 3: Cream Butter and Sugar
In a large mixing bowl, beat the softened butter and granulated sugar together with an electric mixer until light and fluffy, about 2–3 minutes.
Step 4: Add Eggs and Vanilla
Beat in the eggs, one at a time, then add the vanilla extract. Mix until combined.
Step 5: Alternate Adding Wet and Dry Ingredients
Add the flour mixture to the butter mixture in batches, alternating with the buttermilk. Start and end with the flour mixture, mixing just until combined after each addition.
Step 6: Fold in Walnuts
Gently fold the chopped walnuts into the batter.
Step 7: Prepare the Flip Topping
In a small saucepan, combine the brown sugar, butter, heavy cream, vanilla extract, and a pinch of salt. Cook over medium heat, stirring constantly, until the butter is melted and the sugar dissolves. Allow it to simmer for 2–3 minutes, then remove from heat.
Step 8: Assemble the Cake
Pour the prepared flip topping into the bottom of the cake pan. Pour the cake batter on top of the topping, smoothing the top evenly.
Step 9: Bake the Cake
Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
Step 10: Flip and Serve
Allow the cake to cool for 5 minutes in the pan. Run a knife around the edges to loosen it, then carefully flip the cake onto a serving plate. The walnut topping should now be on top, creating a caramelized, sticky layer.
Tips for Success
- Chopped Walnuts: Toast the walnuts lightly in a pan before adding them to the cake for extra flavor.
- Flip Topping: Be sure to let the cake cool for a few minutes before flipping to avoid any caramel spilling out.
- Even Layers: For a more uniform flip, make sure the batter and topping are evenly distributed in the pan.
