Country Ranch Green Beans ‘n Potatoes with Bacon
Ingredients:
- 1 lb fresh green beans, trimmed (or substitute with canned or frozen, drained)
- 1 lb baby red or yellow potatoes, quartered
- 6 slices bacon, chopped
- 1 small onion, diced
- 1 packet (1 oz) ranch seasoning mix
- 1 cup chicken broth
- 2 tablespoons unsalted butter
- Salt and black pepper to taste
- Optional garnish: chopped parsley
Instructions:
- Cook the Bacon:
- In a large skillet or pot, cook the chopped bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set it aside on a paper towel-lined plate.
- Sauté the Onion:
- In the same skillet, with the bacon grease, sauté the diced onion until softened and translucent (about 3–4 minutes).
- Add Potatoes and Seasoning:
- Add the quartered potatoes to the skillet and season with salt and pepper. Stir to coat them in the bacon grease and onions.
- Cook the Green Beans:
- Add the green beans to the skillet along with the chicken broth and ranch seasoning mix. Stir to combine.
- Simmer:
- Cover the skillet and simmer over medium-low heat for 20–25 minutes, or until the potatoes are fork-tender and the green beans are cooked to your liking. Stir occasionally and add a splash of water if the skillet becomes too dry.
- Add Butter and Bacon:
- Once the potatoes and green beans are done, stir in the butter and crispy bacon. Mix well to coat everything evenly.
- Serve:
- Transfer to a serving dish, garnish with chopped parsley if desired, and enjoy!
Tips for Success:
- Potato Options: If using larger potatoes, peel and cut them into bite-sized pieces.
- Bacon Substitutes: For a smoky flavor, you can use ham or smoked sausage instead of bacon.
- Vegetarian Option: Omit the bacon and use olive oil or butter for sautéing.
This hearty, flavorful side dish is perfect for family dinners or potlucks! 🥔🥓🌱
