Homemade Mounds Bars

Ingredients

For the Coconut Filling:

  • 3 cups shredded sweetened coconut
  • 1 cup sweetened condensed milk
  • 1 tsp vanilla extract

For the Chocolate Coating:

  • 2 cups semi-sweet chocolate chips or dark chocolate, melted
  • 1 tbsp coconut oil (optional, for a smoother coating)

Instructions

  1. Prepare the Coconut Filling:
    • In a large mixing bowl, combine the shredded coconut, sweetened condensed milk, and vanilla extract. Mix until fully combined and sticky.
    • Scoop out about 1-2 tablespoons of the mixture at a time and shape it into small rectangular bars. Place the bars on a parchment-lined baking sheet.
    • Freeze the bars for 30 minutes to firm up.
  2. Melt the Chocolate:
    • In a microwave-safe bowl or using a double boiler, melt the chocolate chips with the coconut oil, if using. Stir until smooth and glossy.
  3. Coat the Bars:
    • Using a fork or dipping tool, dip each frozen coconut bar into the melted chocolate, ensuring it’s fully coated. Tap off excess chocolate and return the bar to the parchment-lined sheet.
    • Repeat with all the bars.
  4. Set the Chocolate:
    • Let the coated bars sit at room temperature or refrigerate them for 10-15 minutes until the chocolate hardens.
  5. Serve and Enjoy:
    • Store the bars in an airtight container in the refrigerator for up to a week or freeze for longer storage.
