Homemade Mounds Bars
Ingredients
For the Coconut Filling:
- 3 cups shredded sweetened coconut
- 1 cup sweetened condensed milk
- 1 tsp vanilla extract
For the Chocolate Coating:
- 2 cups semi-sweet chocolate chips or dark chocolate, melted
- 1 tbsp coconut oil (optional, for a smoother coating)
Instructions
- Prepare the Coconut Filling:
- In a large mixing bowl, combine the shredded coconut, sweetened condensed milk, and vanilla extract. Mix until fully combined and sticky.
- Scoop out about 1-2 tablespoons of the mixture at a time and shape it into small rectangular bars. Place the bars on a parchment-lined baking sheet.
- Freeze the bars for 30 minutes to firm up.
- Melt the Chocolate:
- In a microwave-safe bowl or using a double boiler, melt the chocolate chips with the coconut oil, if using. Stir until smooth and glossy.
- Coat the Bars:
- Using a fork or dipping tool, dip each frozen coconut bar into the melted chocolate, ensuring it’s fully coated. Tap off excess chocolate and return the bar to the parchment-lined sheet.
- Repeat with all the bars.
- Set the Chocolate:
- Let the coated bars sit at room temperature or refrigerate them for 10-15 minutes until the chocolate hardens.
- Serve and Enjoy:
- Store the bars in an airtight container in the refrigerator for up to a week or freeze for longer storage.
