Flatbread Pizza with Tzatziki Drizzle
Ingredients
For the Flatbread Pizza:
- 2 flatbreads or naan bread
- 1 tbsp olive oil
- 1 cup shredded mozzarella cheese
- 1/2 cup crumbled feta cheese
- 1/2 red onion, thinly sliced
- 1/2 cucumber, thinly sliced
- 1 tomato, diced
- 1/4 cup Kalamata olives, pitted and sliced
- Fresh parsley, chopped (for garnish)
For the Tzatziki Drizzle:
- 1/2 cup tzatziki sauce (store-bought or homemade)
- 1 tbsp olive oil
- 1 tsp lemon juice
- 1/2 tsp dried dill (optional)
Instructions
- Preheat the Oven:
- Preheat your oven to 400°F (200°C). If using a pizza stone, preheat it as well.
- Prepare the Flatbread:
- Place the flatbreads or naan on a baking sheet. Brush each with a thin layer of olive oil to prevent them from getting soggy during baking.
- Assemble the Pizza:
- Evenly spread the shredded mozzarella and crumbled feta cheese on each flatbread.
- Scatter the sliced red onion, cucumber, tomato, and Kalamata olives on top of the cheese.
- Bake the Pizza:
- Bake the flatbreads for 8-10 minutes or until the cheese is melted and bubbly, and the edges of the flatbread are golden brown.
- Make the Tzatziki Drizzle:
- In a small bowl, mix the tzatziki sauce with olive oil, lemon juice, and dried dill (if using). Stir until smooth.
- Serve the Pizza:
- Once the flatbreads are out of the oven, drizzle the tzatziki sauce over the top of each pizza.
- Garnish with freshly chopped parsley for added color and freshness.
