Best Ever Beef Stew

Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 3 tbsp all-purpose flour
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 4 cups beef broth
  • 1 cup red wine (optional, substitute with extra broth if desired)
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 bay leaves
  • 4 large carrots, cut into chunks
  • 4 medium Yukon gold potatoes, cubed
  • 2 celery stalks, sliced
  • 1 cup frozen peas (optional, for added color)
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Beef:
    • In a large bowl, toss the beef cubes with the flour, ensuring they are evenly coated. Season with salt and black pepper.
  2. Brown the Beef:
    • Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.
    • Sear the beef in batches until browned on all sides. Remove and set aside.
  3. Sauté the Aromatics:
    • In the same pot, add the onion and garlic. Sauté for 3-4 minutes, stirring frequently, until softened and fragrant.
  4. Deglaze the Pot:
    • Pour in the red wine (if using) or a splash of beef broth to deglaze the pot, scraping up any browned bits from the bottom.
  5. Build the Stew Base:
    • Stir in the tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaves. Add the beef broth and return the browned beef to the pot.
  6. Simmer the Stew:
    • Bring the stew to a boil, then reduce the heat to low. Cover and let it simmer for 1.5 hours, stirring occasionally, until the beef begins to tenderize.
  7. Add the Vegetables:
    • Add the carrots, potatoes, and celery to the pot. Stir to combine. Cover and simmer for another 30-40 minutes, or until the vegetables and beef are tender.
  8. Add Final Touches:
    • Stir in the frozen peas during the last 5 minutes of cooking for a pop of color. Adjust seasoning with salt and black pepper as needed.
  9. Serve:
    • Ladle the hearty stew into bowls and garnish with fresh parsley. Serve with crusty bread or over buttered egg noodles for a comforting meal.
