Tremendous Crockpot Beef Tips & Noodles

Ingredients

  • 2 lbs beef stew meat or beef sirloin tips, cut into bite-sized pieces
  • 1 packet (1 oz) onion soup mix
  • 1 packet (1 oz) brown gravy mix
  • 2 cups beef broth
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 tsp Worcestershire sauce
  • 1/2 tsp black pepper
  • 1/4 cup water + 2 tbsp cornstarch (for thickening, optional)
  • 12 oz egg noodles
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Crockpot:
    • Add the beef tips to the crockpot. Sprinkle with onion soup mix and brown gravy mix.
  2. Make the Sauce:
    • In a mixing bowl, whisk together the beef broth, cream of mushroom soup, Worcestershire sauce, and black pepper until smooth.
  3. Add Aromatics:
    • Stir the diced onion and minced garlic into the sauce, then pour it over the beef tips in the crockpot.
  4. Cook:
    • Cover and cook on low for 7-8 hours or high for 4-5 hours, until the beef is tender.
  5. Thicken the Sauce (Optional):
    • If you prefer a thicker sauce, 30 minutes before serving, mix the water and cornstarch to form a slurry. Stir it into the crockpot and allow the sauce to thicken.
  6. Cook the Noodles:
    • About 20 minutes before serving, boil the egg noodles according to package instructions. Drain and set aside.
  7. Serve:
    • Spoon the beef tips and sauce over the cooked egg noodles. Garnish with fresh parsley and serve warm.
