Crab Stuffed Cheddar Bay Biscuits with Lemon Butter

Ingredients:

For the Biscuits:

  • 2 cups all-purpose baking mix (like Bisquick)
  • ¾ cup shredded cheddar cheese
  • ⅔ cup whole milk
  • 2 tablespoons butter, melted
  • 1 teaspoon garlic powder

For the Crab Filling:

  • 8 ounces lump crab meat, picked over for shells
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Old Bay seasoning
  • 1 tablespoon chopped fresh parsley
  • ½ cup cream cheese, softened
  • 1 tablespoon lemon juice

For the Lemon Butter Topping:

  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon lemon zest
  • 1 teaspoon parsley, finely chopped

Instructions:

  1. Prepare the Crab Filling:
    • In a medium bowl, combine the crab meat, mayonnaise, Dijon mustard, Old Bay seasoning, parsley, cream cheese, and lemon juice. Mix until smooth and set aside.
  2. Make the Biscuit Dough:
    • Preheat your oven to 400°F (200°C).
    • In a large bowl, mix the baking mix, shredded cheddar cheese, milk, melted butter, and garlic powder until a dough forms.
  3. Assemble the Stuffed Biscuits:
    • Divide the biscuit dough into 8 equal portions. Flatten each portion into a small disc.
    • Place a spoonful of the crab filling in the center of each disc and fold the dough around the filling, pinching the edges to seal.
    • Arrange the biscuits on a parchment-lined baking sheet, seam-side down.
  4. Bake the Biscuits:
    • Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown.
  5. Prepare the Lemon Butter Topping:
    • While the biscuits bake, mix the melted butter, lemon zest, and parsley in a small bowl.
  6. Finish and Serve:
    • Brush the warm biscuits with the lemon butter topping as soon as they come out of the oven.
