Baked Oatmeal with Carrots and Fruits
Ingredients:
- 2 cups old-fashioned oats
- 1½ teaspoons baking powder
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon salt
- 1½ cups milk (dairy or plant-based)
- ¼ cup maple syrup or honey
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup grated carrots (about 2 medium carrots)
- ½ cup chopped apples or pears
- ½ cup raisins or dried cranberries
- ¼ cup chopped nuts (walnuts or pecans, optional)
- 2 tablespoons shredded coconut (optional)
Instructions
- Preheat Oven:
- Preheat your oven to 375°F (190°C). Grease an 8×8-inch baking dish or a similar-sized casserole dish.
- Mix Dry Ingredients:
- In a large bowl, combine the oats, baking powder, cinnamon, nutmeg, and salt.
- Prepare Wet Ingredients:
- In another bowl, whisk together the milk, maple syrup (or honey), eggs, and vanilla extract.
- Combine Ingredients:
- Pour the wet ingredients into the dry ingredients and stir until combined.
- Fold in the grated carrots, chopped apples or pears, raisins (or cranberries), and nuts or coconut if using.
- Bake:
- Pour the mixture into the prepared baking dish. Spread it out evenly with a spatula.
- Bake for 30-35 minutes, or until the top is golden and the oatmeal is set.
- Serve:
- Let the baked oatmeal cool for a few minutes before serving. Serve warm, plain, or topped with yogurt, additional fruit, or a drizzle of honey.
Tips:
- Make it ahead: This dish can be stored in the refrigerator for up to 5 days. Reheat individual portions in the microwave.
- Add a protein boost by mixing in 2 tablespoons of chia seeds or ground flaxseed.
