Baked Oatmeal with Carrots and Fruits

Ingredients:

  • 2 cups old-fashioned oats
  • 1½ teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 1½ cups milk (dairy or plant-based)
  • ¼ cup maple syrup or honey
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup grated carrots (about 2 medium carrots)
  • ½ cup chopped apples or pears
  • ½ cup raisins or dried cranberries
  • ¼ cup chopped nuts (walnuts or pecans, optional)
  • 2 tablespoons shredded coconut (optional)

Instructions

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C). Grease an 8×8-inch baking dish or a similar-sized casserole dish.
  2. Mix Dry Ingredients:
    • In a large bowl, combine the oats, baking powder, cinnamon, nutmeg, and salt.
  3. Prepare Wet Ingredients:
    • In another bowl, whisk together the milk, maple syrup (or honey), eggs, and vanilla extract.
  4. Combine Ingredients:
    • Pour the wet ingredients into the dry ingredients and stir until combined.
    • Fold in the grated carrots, chopped apples or pears, raisins (or cranberries), and nuts or coconut if using.
  5. Bake:
    • Pour the mixture into the prepared baking dish. Spread it out evenly with a spatula.
    • Bake for 30-35 minutes, or until the top is golden and the oatmeal is set.
  6. Serve:
    • Let the baked oatmeal cool for a few minutes before serving. Serve warm, plain, or topped with yogurt, additional fruit, or a drizzle of honey.

Tips:

  • Make it ahead: This dish can be stored in the refrigerator for up to 5 days. Reheat individual portions in the microwave.
  • Add a protein boost by mixing in 2 tablespoons of chia seeds or ground flaxseed.
