Banana Foster Pudding

Ingredients

  • 4 ripe bananas, sliced
  • 1/2 cup unsalted butter
  • 1/2 cup dark brown sugar
  • 1/4 cup dark rum (optional)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1 cup heavy cream
  • 1/4 cup granulated sugar
  • 1 box (3.4 oz) instant vanilla pudding mix
  • 2 cups cold milk
  • 1 box vanilla wafer cookies or graham crackers
  • Whipped cream, for topping (optional)

Preparation

Step 1: Make the Banana Foster Sauce
In a skillet over medium heat, melt the butter. Add the brown sugar and stir until dissolved. Add the banana slices and cook for 2–3 minutes, coating them in the sauce.

If using rum, carefully pour it in and ignite with a long lighter or match to flambé. Let the flames subside, then stir in the vanilla extract and cinnamon. Remove the skillet from heat and let the sauce cool slightly.

Step 2: Prepare the Pudding Base
In a large bowl, whisk together the instant vanilla pudding mix and cold milk until smooth. Let it sit for 5 minutes to thicken.

In a separate bowl, whip the heavy cream with granulated sugar until soft peaks form. Gently fold the whipped cream into the pudding mixture for a light and creamy texture.

Step 3: Layer the Pudding
In a trifle dish, individual serving glasses, or a 9×13-inch dish, layer the dessert as follows:

  1. A layer of cookies or graham crackers.
  2. A layer of the pudding mixture.
  3. A layer of banana foster sauce.

Repeat the layers until all ingredients are used, finishing with a layer of pudding on top.

Step 4: Chill and Serve
Cover the dish and refrigerate for at least 2 hours to allow the flavors to meld and the cookies to soften slightly.

Before serving, top with whipped cream and drizzle with any remaining banana foster sauce.
