Big apple fritters

Ingredients

  • 2 large apples (Granny Smith or Honeycrisp), peeled, cored, and diced
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg (optional)
  • 1/2 teaspoon salt
  • 2 large eggs
  • 3/4 cup whole milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter, melted
  • Vegetable oil, for frying

For the Glaze:

  • 1 cup powdered sugar
  • 2–3 tablespoons milk
  • 1/2 teaspoon vanilla extract

Preparation

Step 1: Prep the Apples

  • Dice the apples into small pieces. Set aside.

Step 2: Make the Batter

  • In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg (if using), and salt.
  • In another bowl, beat the eggs, milk, vanilla extract, and melted butter until combined.
  • Gradually mix the wet ingredients into the dry ingredients until a thick batter forms.
  • Fold in the diced apples.

Step 3: Heat the Oil

  • Heat about 2 inches of vegetable oil in a deep skillet or pot to 350°F (175°C).
  • Use a thermometer to maintain a steady temperature.

Step 4: Fry the Fritters

  • Use a spoon or ice cream scoop to drop 1/4-cup portions of batter into the hot oil.
  • Fry 2–3 fritters at a time to avoid overcrowding.
  • Cook for 2–3 minutes per side, or until golden brown and cooked through.
  • Remove the fritters with a slotted spoon and place them on a wire rack or paper towels to drain.

Step 5: Make the Glaze

  • In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
  • Adjust the consistency with more milk or powdered sugar as needed.

Step 6: Glaze the Fritters

  • While the fritters are still warm, drizzle or brush the glaze over them.
  • Let the glaze set for a few minutes before serving.

Tips for Success

  • Consistent Temperature: Keep the oil temperature steady to ensure even frying.
  • Don’t Overmix: Gently fold the batter to avoid making it too dense.
  • Serve Fresh: Apple fritters are best enjoyed warm and fresh.

Variations

  • Spiced Fritters: Add a pinch of cloves or cardamom for extra warmth.
  • Caramel Glaze: Substitute the powdered sugar glaze with a caramel drizzle.
  • Nutty Twist: Fold in chopped pecans or walnuts with the apples.

  • Crispy and Soft: A golden, crispy exterior with a tender, apple-packed center.
  • Sweet and Tangy: Perfectly balanced flavors from the fresh apples and glaze.
