- 1 medium head of cauliflower, chopped into florets
- 2 large eggs

- ⅓ cup grated Parmesan cheese
- 2 green onions, finely chopped
- 1 teaspoon garlic powder
- ½ teaspoon smoked paprika
- Salt and pepper, to taste
- Olive oil or vegetable oil, for frying

Instructions:
- Prepare the Cauliflower:
- Bring a pot of water to a boil. Add the cauliflower florets and cook until tender, about 5-7 minutes.
- Drain well and mash the cauliflower with a fork or potato masher until it’s coarse (not fully pureed).
- Mix the Fritter Batter:
- In a large bowl, combine the mashed cauliflower, eggs, flour, Parmesan cheese, green onions, garlic powder, smoked paprika, salt, and pepper. Mix until a thick batter forms.
- Shape and Fry the Fritters:
- Heat a few tablespoons of oil in a large skillet over medium heat.
- Scoop 2-3 tablespoons of the batter for each fritter and drop it into the skillet. Flatten slightly with a spatula.
- Cook for 3-4 minutes on each side, or until golden brown and crispy. Repeat with the remaining batter, adding more oil as needed.
- Serve:
- Transfer the cooked fritters to a plate lined with paper towels to drain excess oil. Serve warm with sour cream, Greek yogurt, or your favorite dipping sauce.

- Add shredded cheese (like cheddar or mozzarella) for a cheesy twist.
- To bake instead of frying, place the fritters on a parchment-lined baking sheet, brush with oil, and bake at 400°F (200°C) for 20-25 minutes, flipping halfway through.
