Cauliflower Fritters

Ingredients:

  • 1 medium head of cauliflower, chopped into florets
  • 2 large eggs
  • ½ cup all-purpose flour (or almond flour for a low-carb option)
  • ⅓ cup grated Parmesan cheese
  • 2 green onions, finely chopped
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • Salt and pepper, to taste
  • Olive oil or vegetable oil, for frying

Optional Toppings:

  • Sour cream or Greek yogurt
  • Fresh parsley or dill

Instructions:

  1. Prepare the Cauliflower:
    • Bring a pot of water to a boil. Add the cauliflower florets and cook until tender, about 5-7 minutes.
    • Drain well and mash the cauliflower with a fork or potato masher until it’s coarse (not fully pureed).
  2. Mix the Fritter Batter:
    • In a large bowl, combine the mashed cauliflower, eggs, flour, Parmesan cheese, green onions, garlic powder, smoked paprika, salt, and pepper. Mix until a thick batter forms.
  3. Shape and Fry the Fritters:
    • Heat a few tablespoons of oil in a large skillet over medium heat.
    • Scoop 2-3 tablespoons of the batter for each fritter and drop it into the skillet. Flatten slightly with a spatula.
    • Cook for 3-4 minutes on each side, or until golden brown and crispy. Repeat with the remaining batter, adding more oil as needed.
  4. Serve:
    • Transfer the cooked fritters to a plate lined with paper towels to drain excess oil. Serve warm with sour cream, Greek yogurt, or your favorite dipping sauce.

Tips:

  • Add shredded cheese (like cheddar or mozzarella) for a cheesy twist.
  • To bake instead of frying, place the fritters on a parchment-lined baking sheet, brush with oil, and bake at 400°F (200°C) for 20-25 minutes, flipping halfway through.
