Chicken and Potato Bake

Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 medium potatoes, peeled and cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme or rosemary
  • Salt and black pepper, to taste
  • 1 cup shredded mozzarella or cheddar cheese
  • 1/2 cup heavy cream (optional, for extra creaminess)
  • Optional garnish: chopped parsley

Preparation

Step 1: Preheat the Oven

  • Preheat your oven to 400°F (200°C).
  • Grease a 9×13-inch baking dish with cooking spray or a light coat of olive oil.

Step 2: Season the Potatoes

  • In a large bowl, toss the potato cubes with 2 tablespoons of olive oil, garlic powder, smoked paprika, dried thyme, salt, and black pepper.
  • Spread the potatoes evenly in the prepared baking dish.

Step 3: Prepare the Chicken

  • Rub the chicken breasts with the remaining olive oil and season them with salt, black pepper, and a sprinkle of smoked paprika.
  • Place the chicken breasts on top of the potatoes in the baking dish.

Step 4: Add Cream (Optional)

  • If using heavy cream, pour it over the chicken and potatoes for a creamy finish.

Step 5: Bake

  • Cover the baking dish with foil and bake for 25 minutes.
  • Remove the foil and bake for an additional 20 minutes, or until the chicken is cooked through (internal temperature of 165°F/75°C) and the potatoes are tender.

Step 6: Add Cheese

  • Sprinkle shredded cheese over the chicken and potatoes.
  • Return to the oven for 5 minutes, or until the cheese is melted and bubbly.

Step 7: Serve

  • Remove the dish from the oven and let it rest for 5 minutes.
  • Garnish with chopped parsley before serving.
