Chicken and Potato Bake
Ingredients
- 4 boneless, skinless chicken breasts
- 4 medium potatoes, peeled and cut into 1-inch cubes
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme or rosemary
- Salt and black pepper, to taste
- 1 cup shredded mozzarella or cheddar cheese
- 1/2 cup heavy cream (optional, for extra creaminess)
- Optional garnish: chopped parsley
Preparation
Step 1: Preheat the Oven
- Preheat your oven to 400°F (200°C).
- Grease a 9×13-inch baking dish with cooking spray or a light coat of olive oil.
Step 2: Season the Potatoes
- In a large bowl, toss the potato cubes with 2 tablespoons of olive oil, garlic powder, smoked paprika, dried thyme, salt, and black pepper.
- Spread the potatoes evenly in the prepared baking dish.
