Classic Crepes Recipe
Ingredients
- 1 cup all-purpose flour
- 2 large eggs
- 1 1/2 cups milk
- 2 tablespoons unsalted butter, melted (plus extra for greasing the pan)
- 1 tablespoon granulated sugar (optional, for sweet crepes)
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract (optional, for sweet crepes)
Instructions
Step 1: Make the Batter
- In a large mixing bowl, whisk together the flour, sugar (if using), and salt.
- Add the eggs and about 1/2 cup of the milk. Whisk until smooth.
- Gradually add the remaining milk, melted butter, and vanilla (if using), whisking until the batter is smooth and slightly runny.
- Cover the bowl and let the batter rest for 20–30 minutes to eliminate air bubbles (optional, but recommended for better texture).
Step 2: Heat the Pan
- Heat a non-stick skillet or crepe pan over medium heat.
- Lightly grease the pan with a small amount of butter or oil.
Step 3: Cook the Crepes
- Pour about 1/4 cup of batter into the center of the pan.
- Quickly swirl the pan to spread the batter into a thin, even layer.
- Cook for 1–2 minutes, or until the edges start to lift and the bottom is lightly golden.
- Flip the crepe using a spatula and cook for another 30 seconds to 1 minute.
- Remove the crepe from the pan and repeat with the remaining batter, greasing the pan as needed.
Step 4: Serve and Enjoy
- Stack the cooked crepes on a plate to keep them warm.
- Fill or top them with your favorite ingredients: Nutella, fresh fruit, whipped cream, powdered sugar, ham and cheese, or savory vegetables.
