Classic Crepes Recipe

Ingredients

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 1/2 cups milk
  • 2 tablespoons unsalted butter, melted (plus extra for greasing the pan)
  • 1 tablespoon granulated sugar (optional, for sweet crepes)
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract (optional, for sweet crepes)

Instructions

Step 1: Make the Batter

  1. In a large mixing bowl, whisk together the flour, sugar (if using), and salt.
  2. Add the eggs and about 1/2 cup of the milk. Whisk until smooth.
  3. Gradually add the remaining milk, melted butter, and vanilla (if using), whisking until the batter is smooth and slightly runny.
  4. Cover the bowl and let the batter rest for 20–30 minutes to eliminate air bubbles (optional, but recommended for better texture).

Step 2: Heat the Pan

  1. Heat a non-stick skillet or crepe pan over medium heat.
  2. Lightly grease the pan with a small amount of butter or oil.

Step 3: Cook the Crepes

  1. Pour about 1/4 cup of batter into the center of the pan.
  2. Quickly swirl the pan to spread the batter into a thin, even layer.
  3. Cook for 1–2 minutes, or until the edges start to lift and the bottom is lightly golden.
  4. Flip the crepe using a spatula and cook for another 30 seconds to 1 minute.
  5. Remove the crepe from the pan and repeat with the remaining batter, greasing the pan as needed.

Step 4: Serve and Enjoy

  1. Stack the cooked crepes on a plate to keep them warm.
  2. Fill or top them with your favorite ingredients: Nutella, fresh fruit, whipped cream, powdered sugar, ham and cheese, or savory vegetables.

  • Smooth Batter: Use a blender to mix the batter for a lump-free result.
  • Consistent Heat: Medium heat works best to avoid burning while ensuring even cooking.
  • Thin Batter: The batter should have a runny consistency similar to heavy cream.
