Cloud Cake Recipe
Ingredients
- 3/4 cup (90g) all-purpose flour
- 1/2 cup (100g) granulated sugar
- 1/4 cup (60g) unsalted butter, softened
- 3 large eggs, separated
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- Pinch of salt
- 1/2 cup (120ml) milk

Instructions
- Preparation:
- Preheat your oven to 350°F (175°C).
- Grease a round 9-inch cake pan and line the bottom with parchment paper.
- Mix Dry Ingredients:
- In a bowl, sift together the flour, baking powder, and salt. Set aside.
- Cream Butter and Sugar:
- In a mixing bowl, beat the softened butter and granulated sugar together until pale and fluffy.
- Add Egg Yolks:
- Add the egg yolks one at a time, mixing well after each addition. Stir in the vanilla extract.
- Combine with Dry Ingredients:
- Gradually add the flour mixture, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined.
- Whip Egg Whites:
- In a clean bowl, whip the egg whites until soft peaks form. Gradually add a pinch of sugar, continuing to whip until stiff peaks form.
- Fold in Egg Whites:
- Gently fold the whipped egg whites into the batter in three additions. Be careful not to deflate the mixture; you want to keep it airy and light.
- Bake the Cake:
- Pour the batter into the prepared cake pan and smooth the top. Bake for about 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Cool:
- Once baked, remove the cake from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.
- Serve:
- Dust the cooled cake with powdered sugar and serve with fresh berries if desired. This cake can be enjoyed on its own or paired with whipped cream or frosting.
