Country Ranch Green Beans ‘n Potatoes with Bacon

Ingredients:

  • 1 lb fresh green beans, trimmed (or substitute with canned or frozen, drained)
  • 1 lb baby red or yellow potatoes, quartered
  • 6 slices bacon, chopped
  • 1 small onion, diced
  • 1 packet (1 oz) ranch seasoning mix
  • 1 cup chicken broth
  • 2 tablespoons unsalted butter
  • Salt and black pepper to taste
  • Optional garnish: chopped parsley

Instructions:

  1. Cook the Bacon:
    • In a large skillet or pot, cook the chopped bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set it aside on a paper towel-lined plate.
  2. Sauté the Onion:
    • In the same skillet, with the bacon grease, sauté the diced onion until softened and translucent (about 3–4 minutes).
  3. Add Potatoes and Seasoning:
    • Add the quartered potatoes to the skillet and season with salt and pepper. Stir to coat them in the bacon grease and onions.
  4. Cook the Green Beans:
    • Add the green beans to the skillet along with the chicken broth and ranch seasoning mix. Stir to combine.
  5. Simmer:
    • Cover the skillet and simmer over medium-low heat for 20–25 minutes, or until the potatoes are fork-tender and the green beans are cooked to your liking. Stir occasionally and add a splash of water if the skillet becomes too dry.
  6. Add Butter and Bacon:
    • Once the potatoes and green beans are done, stir in the butter and crispy bacon. Mix well to coat everything evenly.
  7. Serve:
    • Transfer to a serving dish, garnish with chopped parsley if desired, and enjoy!
