Cream-Filled Cannoli

Cannoli are a classic Italian dessert that are crispy on the outside and filled with a rich, creamy filling on the inside. Making your own cannoli at home is easier than you might think, and the results are absolutely irresistible.

Ingredients
For the shell: Flour, sugar, cocoa powder, ground cinnamon, salt, butter, egg, white wine or vinegar, and vegetable oil for frying.
For the filling: Ricotta cheese, powdered sugar, vanilla extract, mini chocolate chips, and a pinch of cinnamon.

Instructions

  1. In a large bowl, combine the flour, sugar, cocoa powder, cinnamon, and salt for the shells. Cut in the butter until the mixture resembles coarse crumbs.
  2. In a separate bowl, whisk together the egg and white wine (or vinegar). Gradually add this mixture to the flour mixture, stirring to form a dough. Knead until smooth, then cover with plastic wrap and refrigerate for at least 30 minutes.
  3. Roll the dough out on a lightly floured surface to about 1/8-inch thickness. Using a cannoli form or a metal tube, cut the dough into circles large enough to wrap around the form.
  4. Heat vegetable oil in a deep pan over medium heat. Carefully slide the dough rounds onto the form and fry them in batches for about 2-3 minutes or until golden and crispy. Remove from oil and set aside to cool.
  5. In a mixing bowl, combine the ricotta cheese, powdered sugar, vanilla extract, and cinnamon to make the filling. Stir until smooth and creamy. Add mini chocolate chips if desired for extra sweetness and texture.
  6. Once the shells are cool, carefully remove them from the forms. Pipe the cream filling into each shell just before serving to maintain the crispness of the shells.

Serving Suggestions
Sprinkle with powdered sugar and garnish with additional mini chocolate chips or pistachios for extra flavor and texture. Serve immediately for the best crunch!

Tips
To keep the cannoli shells crisp, fill them just before serving. If making ahead, store the shells separately from the filling. You can also try substituting the ricotta with mascarpone for a creamier texture. Enjoy this traditional Italian dessert with family and friends!
