Flatbread Pizza with Tzatziki Drizzle

Ingredients

For the Flatbread Pizza:

  • 2 flatbreads or naan bread
  • 1 tbsp olive oil
  • 1 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1/2 red onion, thinly sliced
  • 1/2 cucumber, thinly sliced
  • 1 tomato, diced
  • 1/4 cup Kalamata olives, pitted and sliced
  • Fresh parsley, chopped (for garnish)

For the Tzatziki Drizzle:

  • 1/2 cup tzatziki sauce (store-bought or homemade)
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • 1/2 tsp dried dill (optional)

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 400°F (200°C). If using a pizza stone, preheat it as well.
  2. Prepare the Flatbread:
    • Place the flatbreads or naan on a baking sheet. Brush each with a thin layer of olive oil to prevent them from getting soggy during baking.
  3. Assemble the Pizza:
    • Evenly spread the shredded mozzarella and crumbled feta cheese on each flatbread.
    • Scatter the sliced red onion, cucumber, tomato, and Kalamata olives on top of the cheese.
  4. Bake the Pizza:
    • Bake the flatbreads for 8-10 minutes or until the cheese is melted and bubbly, and the edges of the flatbread are golden brown.
  5. Make the Tzatziki Drizzle:
    • In a small bowl, mix the tzatziki sauce with olive oil, lemon juice, and dried dill (if using). Stir until smooth.
  6. Serve the Pizza:
    • Once the flatbreads are out of the oven, drizzle the tzatziki sauce over the top of each pizza.
    • Garnish with freshly chopped parsley for added color and freshness.
