Garlic Butter Steak Bites and Cheesy Smashed Potatoes
Ingredients
For the Steak Bites:
- 1 1/2 lbs sirloin steak, cut into bite-sized pieces
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1 teaspoon fresh thyme or parsley, chopped (optional)
- Salt and black pepper, to taste
For the Cheesy Smashed Potatoes:
- 1 1/2 lbs baby potatoes or small Yukon Gold potatoes
- 3 tablespoons olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and black pepper, to taste
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- Optional: chopped parsley or chives for garnish
Preparation
Step 1: Cook the Potatoes
- Bring a large pot of salted water to a boil. Add the baby potatoes and cook until fork-tender, about 15–20 minutes.
- Drain and let cool slightly.
Step 2: Smash and Season Potatoes
- Preheat your oven to 425°F (220°C).
- Place the cooked potatoes on a parchment-lined baking sheet. Use the bottom of a glass or a potato masher to gently flatten each potato.
- Drizzle the potatoes with olive oil and sprinkle with garlic powder, onion powder, salt, and black pepper.
Step 3: Bake the Potatoes
- Bake the potatoes for 15 minutes, then sprinkle them with shredded cheddar and Parmesan cheese.
- Return to the oven and bake for another 5–7 minutes, or until the cheese is melted and bubbly.
Step 4: Prepare the Steak Bites
- Heat a large skillet over medium-high heat. Add olive oil.
- Season the steak bites with salt and black pepper. Add them to the hot skillet in a single layer and cook for 2–3 minutes per side until browned and cooked to your desired doneness.
- Remove the steak bites from the skillet and set aside.
Step 5: Make the Garlic Butter Sauce
- Reduce the heat to medium. In the same skillet, melt the butter and add the minced garlic. Cook for 1 minute until fragrant.
- Stir in fresh thyme or parsley, if using. Return the steak bites to the skillet and toss to coat them in the garlic butter sauce.
Step 6: Serve
- Arrange the cheesy smashed potatoes on a platter. Top with steak bites and drizzle any remaining garlic butter sauce from the skillet over the dish. Garnish with chopped parsley or chives if desired.
Tips for Success
- Steak Choice: Use a tender cut like sirloin or tenderloin for best results.
- Golden Potatoes: Ensure the potatoes are fully dry before smashing for crispier edges.
- Garlic Butter Timing: Add the garlic to the butter only briefly to avoid burning.
Variations
- Herb Infusion: Add rosemary or oregano to the garlic butter sauce for added depth.
- Spicy Twist: Sprinkle red pepper flakes on the steak bites for a hint of heat.
- Cheese Swap: Use mozzarella or Gruyère instead of cheddar for a unique flavor.
