Garlic Herb Pull-Apart Rolls

Ingredients

  • 1 package (1/4 oz) active dry yeast
  • 1 cup warm water (110°F/45°C)
  • 2 tablespoons granulated sugar
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon salt
  • 3 cups all-purpose flour (plus extra for dusting)
  • 1/4 cup unsalted butter, melted (for brushing)
  • 3 garlic cloves, minced
  • 2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon dried thyme or rosemary
  • Optional: Grated Parmesan cheese for topping

Preparation

Step 1: Activate the Yeast

  1. In a small bowl, combine warm water, yeast, and sugar. Stir gently and let sit for 5–10 minutes until frothy.

Step 2: Make the Dough

  1. In a large mixing bowl, combine the yeast mixture, melted butter, salt, and 2 1/2 cups of flour.
  2. Gradually add the remaining flour until the dough forms and is slightly sticky but manageable.

Step 3: Knead the Dough

  1. Turn the dough onto a floured surface and knead for 6–8 minutes until smooth and elastic.
  2. Place the dough in a greased bowl, cover with a damp cloth, and let rise for 1 hour, or until doubled in size.

Step 4: Shape the Rolls

  1. Punch down the risen dough and divide it into 12–15 equal pieces. Roll each piece into a ball.
  2. Arrange the balls in a greased 9×13-inch baking dish or round cake pan, leaving a little space between each.

Step 5: Prepare the Garlic Herb Butter

  1. In a small bowl, mix melted butter, minced garlic, parsley, and thyme.
  2. Brush the rolls generously with half of the garlic herb butter.

Step 6: Second Rise

  1. Cover the rolls loosely with a damp cloth and let them rise for another 20–30 minutes until puffy.

Step 7: Bake the Rolls

  1. Preheat the oven to 375°F (190°C).
  2. Bake the rolls for 18–22 minutes, or until golden brown on top.

Step 8: Add Final Touches

  1. Remove from the oven and brush with the remaining garlic herb butter.
  2. Sprinkle with Parmesan cheese if desired.

Tips for Success

  • Warm Water: Ensure the water is warm, not hot, to properly activate the yeast.
  • Even Size: Use a kitchen scale to divide the dough evenly for uniform rolls.
  • Fresh Herbs: Fresh parsley and thyme add the best flavor, but dried herbs work too.

Variations

  • Cheesy Rolls: Stuff each dough ball with a cube of mozzarella or cheddar cheese.
  • Spicy Twist: Add a pinch of chili flakes to the garlic herb butter.
  • Whole Wheat Option: Substitute half the flour with whole wheat flour for a healthier version.

Why You’ll Love These Rolls

  • Soft and Fluffy: Perfectly tender and pillowy rolls.
  • Flavorful: Bursting with garlicky, herby goodness.
  • Crowd-Pleaser: Ideal for holiday dinners, parties, or as a side for soups and pasta.
