Hawaiian Chicken Sheet Pan

Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 1 small red onion, sliced
  • 1 zucchini, sliced into rounds
  • 3 tablespoons olive oil
  • 1/4 cup soy sauce
  • 3 tablespoons honey
  • 2 tablespoons ketchup
  • 2 teaspoons minced garlic
  • 1 teaspoon grated ginger
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • Optional garnish: chopped green onions or sesame seeds

Preparation

Step 1: Preheat the Oven

  • Preheat your oven to 400°F (200°C).
  • Line a large sheet pan with parchment paper or foil for easy cleanup.

Step 2: Prepare the Marinade

  • In a small bowl, whisk together the soy sauce, honey, ketchup, garlic, ginger, and smoked paprika.

Step 3: Marinate the Chicken

  • Place the chicken breasts in a large zip-top bag or bowl.
  • Pour half of the marinade over the chicken, reserving the other half.
  • Marinate in the refrigerator for 15–30 minutes (optional for deeper flavor).

Step 4: Arrange the Ingredients on the Sheet Pan

  • Spread the diced bell peppers, pineapple chunks, red onion, and zucchini evenly across the sheet pan.
  • Drizzle with olive oil and season with salt and pepper. Toss to coat.
  • Remove the chicken from the marinade and place it on top of the vegetables. Discard used marinade.

Step 5: Bake the Sheet Pan Meal

  • Bake for 20–25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  • Brush the reserved marinade over the chicken halfway through baking.

Step 6: Serve

  • Remove from the oven and let rest for 5 minutes.
  • Garnish with green onions or sesame seeds, if desired.
  • Serve with steamed rice, cauliflower rice, or on its own for a complete meal.
