Low-Carb Beef and Broccoli Stir-Fry
Ingredients
- 1 lb flank steak or sirloin, thinly sliced against the grain
- 2 tablespoons avocado oil or sesame oil (for cooking)
- 2 cups broccoli florets
- 1/2 medium onion, thinly sliced
- 3 cloves garlic, minced
- 1/4 cup soy sauce (or tamari for gluten-free)
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil (optional, for extra flavor)
- 1 tablespoon low-sodium beef broth or water
- 1 teaspoon ginger, grated (fresh or ground)
- 1 teaspoon erythritol or your preferred low-carb sweetener (optional)
- 1/2 teaspoon crushed red pepper flakes (optional, for heat)
- 1 tablespoon sesame seeds (for garnish)
- Fresh green onions, sliced (for garnish)
Preparation
Step 1: Prepare the Beef
- Thinly slice the flank steak or sirloin against the grain into strips.
- In a small bowl, mix together the soy sauce (or tamari), rice vinegar, sesame oil (if using), ginger, and erythritol (if using) to create the sauce. Set aside.
Step 2: Cook the Beef
- Heat 1 tablespoon of avocado or sesame oil in a large skillet or wok over medium-high heat.
- Add the sliced beef in batches (so it cooks evenly) and stir-fry for 2-3 minutes, or until browned and cooked through.
- Remove the beef from the skillet and set aside.
Step 3: Stir-Fry the Vegetables
- In the same skillet, add the remaining 1 tablespoon of oil and heat over medium-high heat.
- Add the sliced onion and stir-fry for 2 minutes, until softened.
- Add the broccoli florets and garlic, and stir-fry for another 3-4 minutes until the broccoli is tender but still crisp.
Step 4: Combine and Simmer
- Return the cooked beef to the skillet with the vegetables.
- Pour the prepared sauce over the beef and broccoli mixture, stirring to coat everything evenly.
- Add the beef broth or water to create a bit of sauce and simmer for 1-2 minutes, allowing the sauce to thicken slightly.
Step 5: Garnish and Serve
- Once everything is well combined and heated through, remove from heat.
- Garnish with sesame seeds and fresh green onions.
- Serve immediately.
Tips for Success
- Thin Slices of Beef: Make sure the beef is thinly sliced against the grain for the best texture and tenderness.
- Broccoli Texture: If you prefer softer broccoli, you can blanch it briefly in boiling water before stir-frying.
- Customize the Veggies: Add other low-carb vegetables like bell peppers, zucchini, or mushrooms if desired.
Variations
- Spicy Version: Add extra crushed red pepper flakes or a bit of chili paste to the sauce for heat.
- Low-Carb Noodles: Serve this stir-fry over shirataki noodles or spiralized zucchini for a complete low-carb meal.
- Chicken Option: Replace the beef with chicken breast or thighs for a leaner protein option.
