Mashed Potato Puffs

Ingredients

  • 4 cups mashed potatoes (preferably leftover, cold mashed potatoes work best)
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup unsalted butter, melted
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • 2 large eggs, beaten
  • 2 tbsp fresh chives or green onions, chopped (optional for garnish)
  • 1/4 cup breadcrumbs (for topping, optional)

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Grease a muffin tin or line it with paper liners.
  2. Prepare the Mashed Potato Mixture:
    • In a large bowl, combine the mashed potatoes, cheddar cheese, sour cream, melted butter, Parmesan cheese, garlic powder, onion powder, salt, and black pepper. Stir until everything is well mixed.
  3. Add the Eggs:
    • Stir in the beaten eggs until the mixture is smooth and well combined.
  4. Fill the Muffin Tin:
    • Spoon the mashed potato mixture into the muffin tin, filling each cup about 3/4 of the way. You can also smooth the tops of the puffs with a spoon or spatula for a neat appearance.
  5. Add Topping (Optional):
    • If desired, sprinkle breadcrumbs on top of each mashed potato puff for extra crunch.
  6. Bake:
    • Bake in the preheated oven for 20-25 minutes, or until the tops of the puffs are golden brown and the edges are crispy.
  7. Serve:
    • Let the mashed potato puffs cool for a few minutes before removing them from the muffin tin.
    • Garnish with fresh chives or green onions, if desired, and serve warm.
