Mashed Potato Puffs
Ingredients
- 4 cups mashed potatoes (preferably leftover, cold mashed potatoes work best)
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup unsalted butter, melted
- 1/4 cup grated Parmesan cheese
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt (or to taste)
- 1/4 tsp black pepper
- 2 large eggs, beaten
- 2 tbsp fresh chives or green onions, chopped (optional for garnish)
- 1/4 cup breadcrumbs (for topping, optional)
Instructions
- Preheat the Oven:
- Preheat your oven to 375°F (190°C). Grease a muffin tin or line it with paper liners.
- Prepare the Mashed Potato Mixture:
- In a large bowl, combine the mashed potatoes, cheddar cheese, sour cream, melted butter, Parmesan cheese, garlic powder, onion powder, salt, and black pepper. Stir until everything is well mixed.
- Add the Eggs:
- Stir in the beaten eggs until the mixture is smooth and well combined.
- Fill the Muffin Tin:
- Spoon the mashed potato mixture into the muffin tin, filling each cup about 3/4 of the way. You can also smooth the tops of the puffs with a spoon or spatula for a neat appearance.
- Add Topping (Optional):
- If desired, sprinkle breadcrumbs on top of each mashed potato puff for extra crunch.
- Bake:
- Bake in the preheated oven for 20-25 minutes, or until the tops of the puffs are golden brown and the edges are crispy.
- Serve:
- Let the mashed potato puffs cool for a few minutes before removing them from the muffin tin.
- Garnish with fresh chives or green onions, if desired, and serve warm.
