Peach Cobbler

Ingredients

  • 4 cups fresh or frozen peaches, peeled and sliced
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1 tablespoon cornstarch (optional, for thicker filling)

For the Topping

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 1/2 cup milk
  • 1 teaspoon vanilla extract

Preparation

Step 1: Prepare the Peach Filling

  • In a medium bowl, combine the sliced peaches, sugar, lemon juice, vanilla, cinnamon, and cornstarch (if using).
  • Toss to coat and set aside for 10 minutes to allow the juices to develop.

Step 2: Preheat the Oven

  • Preheat your oven to 350°F (175°C).
  • Grease an 8×8-inch baking dish or similar-sized pan.

Step 3: Make the Topping

  • In a separate bowl, mix together the flour, sugar, baking powder, and salt.
  • Stir in the melted butter, milk, and vanilla extract until just combined into a thick batter.

Step 4: Assemble the Cobbler

  • Pour the peach mixture into the prepared baking dish, spreading it out evenly.
  • Spoon the topping batter in dollops over the peaches, covering most of the surface. It’s okay if some peach filling peeks through.

Step 5: Bake the Cobbler

  • Place the dish in the preheated oven and bake for 40–45 minutes, or until the topping is golden brown and a toothpick inserted into the topping comes out clean.

Step 6: Cool and Serve

  • Let the peach cobbler cool for about 10 minutes before serving.
  • Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream, if desired.

Tips for Success

  • Perfect Peaches: Fresh peaches in peak season provide the best flavor, but frozen peaches work well too.
  • Sweetness Adjustment: Taste the peach mixture before baking and adjust the sugar if needed, depending on the sweetness of your peaches.
  • Crispy Topping: If you prefer a crunchier topping, sprinkle a little extra sugar on top before baking.

Variations

  • Berry Peach Cobbler: Add 1 cup of fresh or frozen berries (blueberries, raspberries, or blackberries) to the peach filling for extra flavor.
  • Spiced Cobbler: Add a pinch of nutmeg or allspice to the peach filling for a warm, spiced twist.
  • Gluten-Free: Substitute the flour with a gluten-free all-purpose flour blend.
