- 1 small red bell pepper, thinly sliced
- 1 small red onion, thinly sliced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- ½ teaspoon ground cumin
- ½ teaspoon smoked paprika
- Salt and pepper, to taste
- ½ cup crumbled feta cheese
- ¼ cup chopped fresh parsley
Optional Toppings:
- Tzatziki sauce
- Sliced Kalamata olives
- Fresh lemon wedges
Instructions:
- Cook the Meat:
- Heat olive oil in a large skillet over medium heat.
- Add the ground turkey or chicken and cook until browned, breaking it into crumbles, about 5-7 minutes.
- Add Vegetables and Seasonings:
- Add the shredded cabbage, red bell pepper, red onion, and garlic to the skillet. Stir to combine.
- Sprinkle with oregano, cumin, smoked paprika, salt, and pepper. Cook for another 5-7 minutes, stirring occasionally, until the vegetables are tender.
- Finish with Cheese and Herbs:
- Remove the skillet from heat and stir in crumbled feta cheese and fresh parsley.
- Serve:
- Serve warm in bowls. Top with tzatziki sauce, sliced olives, or a squeeze of fresh lemon juice for added Mediterranean flair.
Tips:
- For a low-carb meal, serve as-is. For a heartier option, pair with pita bread or over a bed of rice or quinoa.
- Substitute ground beef or lamb for a richer flavor.
