Sautéed Mushroom and Broccoli Stir-Fry
Ingredients
- 2 cups broccoli florets
- 1 1/2 cups mushrooms, sliced (such as cremini, button, or shiitake)
- 2 tablespoons vegetable oil or sesame oil
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced or grated
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional, for extra depth)
- 1 tablespoon rice vinegar or lemon juice
- 1 teaspoon sugar or honey
- 1 teaspoon cornstarch mixed with 2 tablespoons water (slurry, for thickening)
- Optional toppings: sesame seeds, sliced green onions, or crushed red pepper flakes
Preparation
Step 1: Prep the Vegetables
- Wash and cut the broccoli into bite-sized florets.
- Clean and slice the mushrooms.
Step 2: Prepare the Sauce
- In a small bowl, mix soy sauce, oyster sauce (if using), rice vinegar, sugar, and the cornstarch slurry. Set aside.
Step 3: Sauté the Vegetables
- Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.
- Add the broccoli and stir-fry for 2–3 minutes until bright green and slightly tender. Remove from the pan and set aside.
- Add the remaining tablespoon of oil to the pan, then sauté the mushrooms for 4–5 minutes until they release their moisture and begin to brown.
Step 4: Combine and Flavor
- Return the broccoli to the pan with the mushrooms.
- Add the minced garlic and ginger, stirring for about 1 minute until fragrant.
- Pour in the prepared sauce and toss to coat the vegetables evenly.
Step 5: Thicken and Serve
- Cook for 1–2 minutes, stirring frequently, until the sauce thickens and clings to the vegetables.
- Remove from heat and garnish with sesame seeds, green onions, or crushed red pepper flakes if desired.
Tips for Success
- Crisp-Tender Broccoli: Avoid overcooking to maintain a vibrant color and slight crunch.
- Even Sautéing: Cut mushrooms and broccoli into similar sizes for even cooking.
- Customize the Veggies: Add bell peppers, snap peas, or carrots for more variety.
Variations
- Add Protein: Include tofu, chicken, or shrimp for a heartier dish.
- Gluten-Free: Use tamari or coconut aminos instead of soy sauce.
