Ingredients
- For the Meat Filling:
- 1 lb ground lamb (or beef for Cottage Pie)
- 1 medium onion, finely chopped
- 2 medium carrots, diced
- 2 cloves garlic, minced
- 1 cup frozen peas
- 2 tablespoons tomato paste
- 1 cup beef broth
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika

- 2 lbs potatoes, peeled and diced
- 1/4 cup unsalted butter
- 1/3 cup milk (or cream)

Preparation
Step 1: Make the Mashed Potatoes
- Boil the diced potatoes in salted water until tender, about 15–20 minutes.
- Drain and mash the potatoes. Stir in the butter, milk, and cheese (if using). Season with salt and pepper. Set aside.
Step 2: Prepare the Meat Filling
- Preheat your oven to 375°F (190°C).
- In a large skillet, cook the ground lamb over medium heat until browned. Drain any excess fat.
- Add the chopped onion, carrots, and garlic. Cook for 5–7 minutes, or until the vegetables soften.
- Stir in the tomato paste, Worcestershire sauce, thyme, paprika, and beef broth. Simmer for 5–7 minutes until the mixture thickens slightly.
- Add the frozen peas and stir to combine. Season with salt and pepper to taste.
Step 3: Assemble the Shepherd’s Pie
- Transfer the meat filling to a greased 9×9-inch baking dish or similar.
- Spread the mashed potatoes evenly over the meat mixture, creating peaks with a fork for a decorative effect.
Step 4: Bake
- Place the dish in the oven and bake for 20–25 minutes, or until the mashed potatoes are golden and the filling is bubbly.
- For extra browning, broil the top for 2–3 minutes.
Step 5: Serve
Let the pie cool for 5 minutes before serving. Garnish with fresh parsley, if desired.
