Shepherd’s Pie

Ingredients

  • For the Meat Filling:
    • 1 lb ground lamb (or beef for Cottage Pie)
    • 1 medium onion, finely chopped
    • 2 medium carrots, diced
    • 2 cloves garlic, minced
    • 1 cup frozen peas
    • 2 tablespoons tomato paste
    • 1 cup beef broth
    • 1 teaspoon Worcestershire sauce
    • 1 teaspoon dried thyme
    • 1/2 teaspoon paprika
    • Salt and pepper, to taste
  • For the Mashed Potato Topping:
    • 2 lbs potatoes, peeled and diced
    • 1/4 cup unsalted butter
    • 1/3 cup milk (or cream)
    • 1/2 cup shredded cheddar cheese (optional)
    • Salt and pepper, to taste

Preparation

Step 1: Make the Mashed Potatoes

  1. Boil the diced potatoes in salted water until tender, about 15–20 minutes.
  2. Drain and mash the potatoes. Stir in the butter, milk, and cheese (if using). Season with salt and pepper. Set aside.

Step 2: Prepare the Meat Filling

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, cook the ground lamb over medium heat until browned. Drain any excess fat.
  3. Add the chopped onion, carrots, and garlic. Cook for 5–7 minutes, or until the vegetables soften.
  4. Stir in the tomato paste, Worcestershire sauce, thyme, paprika, and beef broth. Simmer for 5–7 minutes until the mixture thickens slightly.
  5. Add the frozen peas and stir to combine. Season with salt and pepper to taste.

Step 3: Assemble the Shepherd’s Pie

  1. Transfer the meat filling to a greased 9×9-inch baking dish or similar.
  2. Spread the mashed potatoes evenly over the meat mixture, creating peaks with a fork for a decorative effect.

Step 4: Bake

  1. Place the dish in the oven and bake for 20–25 minutes, or until the mashed potatoes are golden and the filling is bubbly.
  2. For extra browning, broil the top for 2–3 minutes.

Step 5: Serve
Let the pie cool for 5 minutes before serving. Garnish with fresh parsley, if desired.
