Spinach Stuffed Pastry
Ingredients
- 1 sheet puff pastry, thawed
- 1 1/2 cups fresh spinach, chopped
- 1/2 cup ricotta cheese
- 1/2 cup feta cheese, crumbled
- 1 large egg, lightly beaten (plus 1 egg for egg wash)
- 1 clove garlic, minced
- 1/4 teaspoon ground nutmeg
- Salt and black pepper, to taste

Preparation
Step 1: Preheat the Oven
- Preheat your oven to 375°F (190°C).
- Line a baking sheet with parchment paper.
Step 2: Prepare the Filling
- In a medium bowl, mix the chopped spinach, ricotta cheese, feta cheese, one beaten egg, minced garlic, nutmeg, salt, and black pepper.
- Stir until the mixture is well combined.
Step 3: Roll Out the Pastry
- Lightly flour a clean surface and roll out the puff pastry sheet into a rectangle (approximately 12×10 inches).
- Cut the pastry into 6 equal squares or rectangles.
Step 4: Fill the Pastry
- Place a heaping tablespoon of the spinach mixture in the center of each pastry square.
- Fold each square into a triangle or rectangle, sealing the edges with a fork.
Step 5: Brush with Egg Wash
- Beat the remaining egg and brush it over the top of each pastry for a golden finish.
- Optionally, sprinkle sesame seeds on top.
Step 6: Bake
- Transfer the filled pastries to the prepared baking sheet.
- Bake in the preheated oven for 20–25 minutes, or until golden brown and puffed.
Step 7: Serve
- Allow the pastries to cool slightly before serving. Serve warm as a snack, appetizer, or light meal.
