Sweet Potato Rocambole with Minced Meat

Ingredients:

For the Sweet Potato Dough:

  • 2 large sweet potatoes, boiled and mashed (about 2 cups)
  • 1 cup all-purpose flour (or gluten-free flour for a GF option)
  • 1 large egg
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For the Minced Meat Filling:

  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1 pound (450g) ground beef or turkey
  • 1 medium carrot, grated
  • ½ cup tomato sauce
  • 1 teaspoon paprika
  • ½ teaspoon dried oregano
  • Salt and pepper, to taste
  • 2 tablespoons chopped fresh parsley

Instructions:

  1. Prepare the Sweet Potato Dough:
    • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly grease it.
    • In a large bowl, combine the mashed sweet potatoes, flour, egg, salt, and pepper. Mix until a soft dough forms. If the dough is too sticky, add a little more flour.
  2. Prepare the Minced Meat Filling:
    • Heat olive oil in a skillet over medium heat. Add the onion and garlic, cooking until fragrant and softened.
    • Add the ground meat, breaking it up with a spoon, and cook until browned.
    • Stir in the grated carrot, tomato sauce, paprika, oregano, salt, and pepper. Cook for 5-7 minutes until the mixture thickens. Remove from heat and stir in the parsley.
  3. Assemble the Rocambole:
    • On a floured surface, roll out the sweet potato dough into a rectangle about ½ inch thick.
    • Spread the minced meat filling evenly over the dough, leaving a small border around the edges.
    • Carefully roll the dough into a log, starting from one of the shorter sides. Use the parchment paper to help guide the roll if needed. Seal the edges to prevent filling from spilling out.
  4. Bake the Rocambole:
    • Place the rolled dough onto the prepared baking sheet, seam side down.
    • Bake for 25-30 minutes, or until golden and firm.
  5. Serve:
    • Let the rocambole cool slightly before slicing into rounds. Serve warm with a side salad or dipping sauce.

Tips:

  • Add grated cheese to the filling for extra flavor.
  • For a vegetarian version, substitute the meat with sautéed mushrooms or lentils.
