Tiramisu Pudding Cups

Ingredients:

  • 1 cup heavy whipping cream
  • 1/2 cup mascarpone cheese
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup strong brewed coffee (cooled)
  • 2 tbsp coffee liqueur (optional)
  • 12 ladyfingers (broken into small pieces)
  • 1 package (3.4 oz) instant vanilla or chocolate pudding mix
  • 2 cups cold milk
  • 1 tbsp cocoa powder (for dusting)
  • Dark chocolate shavings (optional)

Instructions:

  1. Prepare the Pudding:
    • In a bowl, whisk together the instant pudding mix and cold milk.
    • Let it set for about 5 minutes until thickened.
  2. Make the Cream Mixture:
    • In another bowl, beat the heavy cream, mascarpone cheese, powdered sugar, and vanilla extract until soft peaks form.
  3. Soak the Ladyfingers:
    • Mix the cooled coffee and coffee liqueur in a shallow bowl.
    • Dip the ladyfinger pieces briefly in the coffee mixture.
  4. Assemble the Cups:
    • In serving cups, layer soaked ladyfingers, a layer of pudding, and a layer of mascarpone cream.
    • Repeat the layers if desired.
  5. Final Touches:
    • Dust with cocoa powder and garnish with chocolate shavings.
  6. Chill & Serve:
    • Refrigerate for at least 1 hour before serving to allow flavors to meld.
