Yaya’s Cowboy Cake!

Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk (or 1 cup milk + 1 tablespoon vinegar, mixed and rested for 5 minutes)
  • 1 cup strong brewed coffee (or hot water for a milder flavor)
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans or walnuts (optional)

For the Frosting

  • 1/2 cup unsalted butter
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup milk
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Preparation

Step 1: Preheat the Oven

  • Preheat your oven to 350°F (175°C).
  • Grease and flour a 9×13-inch baking dish or line it with parchment paper.

Step 2: Make the Cake Batter

  • In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
  • In a separate bowl, combine the buttermilk, coffee, oil, eggs, and vanilla extract.
  • Gradually pour the wet ingredients into the dry ingredients, mixing until smooth.
  • Fold in the chopped nuts if using.

Step 3: Bake the Cake

  • Pour the batter into the prepared baking dish.
  • Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove from the oven and let the cake cool completely in the pan.

Step 4: Prepare the Frosting

  • In a saucepan over medium heat, melt the butter.
  • Stir in the cocoa powder and milk until smooth.
  • Remove from heat and whisk in the powdered sugar and vanilla extract until thick and creamy.

Step 5: Frost the Cake

  • Pour the warm frosting over the cooled cake, spreading it evenly with a spatula.
  • Let the frosting set before slicing.

Tips for Success

  • Coffee Boost: The coffee enhances the chocolate flavor but can be replaced with water for a milder taste.
  • Extra Moisture: Add 1/4 cup sour cream or Greek yogurt for an even richer texture.
  • Nut-Free Option: Skip the nuts if preferred, or substitute with chocolate chips.

Variations

  • Spicy Kick: Add a pinch of cinnamon or cayenne pepper for a cowboy-inspired twist.
  • Caramel Drizzle: Top with a drizzle of caramel sauce for extra decadence.
  • Sheet Cake Style: Double the frosting recipe for a thicker layer.
